STEP 1: MAKE A PLAN

Wine is one of those consumables that can be around for a long time. You need to know how much wine you have and how long you want to store it. You need to know how it fits into your life. Does it need a wine cellar or a rack in your home? If you’re planning on keeping a bottle instead of consuming it immediately, it’s time to consider temperature, light, and humidity guidelines. That means that if you have a bunch of wine you want to keep, you’re going to need to take some steps to keep it at the top of its game.

STEP 2: SEARCH OUT DARK SPACES

Light is wine’s enemy. That means you need to store it away from light, especially fluorescent lights and direct sunshine. UV rays actually affect the wine and make it “lightstruck.” When this happens, the wine starts to smell bad because the light is interacting with some of the phenolic chemical compounds within the wine. The lighter the wine’s bottle is and the lighter color the wine is itself, the more vulnerable to light problems the wine becomes. For certain wines, just incandescent light can cause problems.

You need to store your wine in a dry, dark place. If you do this, you’ll preserve its taste. If it isn’t possible to keep the wine completely out of the slight, wrap it in cloth or store it in a box. STEP 3: KEEP IT THE RIGHT KIND OF COOL

Wine must be stored at the correct temperature and humidity. It doesn’t like high temperatures, which means the kitchen is not a good place for it. Instead, keep the wine in the coolest, darkest part of your home. Aim for 55 degrees and a humidity of 70 percent to keep the corks soft. A dried-out cork can end up allowing air and mold into the wine, so you don’t want to deal with that. You can invest in a humidity gauge from your local hardware store for about $20, a very worthwhile investment.

STEP 4: STORE IT ON ITS SIDE

Yes, storing wine bottles upright is a long more convenient than laying them down when it comes to cabinet space. However, upright wine is at risk for a dried-out cork, which will allow oxygen to enter and spoil the wine.
